Healthy Habits: Shrimp Black Bean Fajitas!

Today was frigid cold in Maryland and the last thing I was thinking about was cooking, however I knew how important it is to make sure that my children are receiving their daily dose of nutrients from the most healthiest foods I can give them. See learning what to cook and how to cook are 2 major key components when eating healthy.  Today I whipped up Shrimp Black Bean Wheat Fajitas which might I add was very delicious, they were very light, the were not weighed down like most restaurant brought fajitas, that have creams and cheeses and a whole swoo of other ingredients. You know when you go to a restaurant they rarely ever give you enough greenery to fill you plate. For me making sure my boys have thise nutrients to help build strong muscles and bones are a must!  Tonight my family and I had these great fajitas that were really awesome, if I must say so myself.They were filled with Black Beans, Sautéed Shrimp, Brown Rice, Spinach and Carrots.. This meal definitely hit the spot 😊

Here is one of my Favorite delicious meals..Cauliflower Scramble and guess your family is going to love and enjoy this one right here.. It was very simple and Delicious! My ingredients: 1 Large Head of Cauliflower 2 Bell Peppers 1 Red Onions 2 Cups Mushrooms 1 Stalk of Celery 2 Tablespoons of Low Sodium Soy Sauce Directions: Cut 1 Head of Cauliflower into florets, cut bell peppers, onions, mushrooms and celery into 1/2 inch diced pieces, in saucepan place all vegetables in pan with 1/2 cup of water, and let simmer and saute over medium heat for 7-10 minutes, then add 2 tablespoons of low sodium soy sauce, let simmer for another 5 minutes, the aroma from the vegetables are so delightful, you are going to think someone else has prepared this meal for you and your family. Once all vegetables are tender and have sauted completely, then take vegetables from saucepan and place on family dish for serving.. They are going to love it! Creating Healthy Meals for my family use to be very challenging for me to accomplish. Only because I have so many picky eaters in my home. My boys range from 4, 11,12 and 14 years of age,  Trying to find the right meals that everyone would be happy with was one battle after another. However, I started to create my own meals from exploring books, blogs, and a whole lot of research, I learned that it was more about the nutrients that I wanted to give to them more than anything else. So thats when I started to add some type of vegetable to their plate, and over time, with me making the meals more interesting it has become such a household phenomenon that everyone wants to help prepare the meals and they love challenging their minds to take an unhealthy meal and turn it into a healthier one. Now it does take time for them to achieve these little goals and to start to see that it is more healthier to go for a bowl of fruit than a greasy burger. I am so glad to see that my hard work is pay
