Seasoned Pita Chips

Listen I fell in love last week with Pita Chips! My husband took the family to Cava, we were out doing some shopping and of course the boys were hungry so we opted for Cava!  They have a very intriguing menu and because they had Vegan options I was able to get something delicious. So I got the Lentil Avocado Bowl! This bowl was so delicious, it has supergreens, roasted vegetables, hummus, avocado, Falafel. It just is so good and to top it off they added the pita chips!  I was in goodness heaven. The Pita Chips had me hooked. I just had to know how they made them. So I asked the young lady behind the counter and she said they are fried in Canola oil. My heart just sank, the disappointment I felt in that moment. Of all the oils I at least figured they would use olive oils, but because of inflation, the industry and the cheapest oil to get for consumer purposes would be canola.  I decided that I would make my very own Pita Chips, delicious and light! Vegan Cornbread

Listen!!!! I never thought in a million years that your girl would be ducking it out in the kitchen with these vegan recipes from scratch. Yes, I’m so freaking proud of myself. I was craving some type of bread today once I arrived home.  At first I was going to just make some muffins but I wanted something different to go with my veggies & cauliflower rice. So off to creativity land in my head. I looked in my cupboards and saw a bag of cornmeal that I have not used. The bag was still sealed closed. I remember reading about cornmeal and how it’s great for making homemade  cornbread.  So that’s exactly what I did. Cornbread hit the spot. The best way to describe it just melts in your mouth. Tuna Stuffed Peppers 🌶

The problem that I see with most is many have no patience when it comes to nourishing their bodies. Everything is fast food and on the go. Healthy takes time and it’s imperative to have patience with your body as your going through this journey.  When I got home today, the last thing I wanted to do was cook, I just wanted to put my feet up and chill, and get something quick & fast, but that wasn’t going to get me to my goals. That kind of thinking wasn’t going to help me with my weight. So I revamped my thinking and made it happen. Took me all about 30 minutes tops to prepare this meal for my family. Delicious Collard Greens

Food was not my friend, is what I use to tell myself. Holidays would come around I would eat so much, which was literally pass full and feel stuffed like a Turkey. It was one of the worst feelings there could be. I would eat because it was there or because I’m just having such a great time and everyone else is eating so why not me?  It wasn’t until I started to look at what I was eating and why? Why did I have to eat to feel over full or to eat where I  had to unbutton my pants, that was just a mess within itself. Holidays for me is about family and creating moments that I can cherish for my lifetime. Foods play a major part in all gathers & especially holidays, celebrations  & birthdays.
