Pressed For Time

Somedays you will have all the time in the world and then there will be days where time will not be your friend, trust me I definitely get it. On my days where I am pressed for time, whether it be with my personal life or professional life, I try my best not to neglect my health. So tonight I whipped this meal in less than 20 minutes. it took me no time to think outside of my box. First I knew that my day was  going to be longer than expected and by the time I got home, helped my boys with homework and helped everyone get situated for the next day ahead. it was now 7pm and dinner needed to be cooked, but I knew I didn't want to stand over a stove for hours,  so I just threw together my favorite go to, which is Shrimp, Kale, mushrooms and Bell peppers. Simple and delicious.  I think back to when I would make market runs and ow boy o boy the unhealthy cheap items that I would throw in my cart πŸ›’ would be unbelievable! The funny thing about shopping is the cheap affordable foods are always the cheapest lol πŸ˜‚ so you think!  I had to learn what to purchase and how to create meals that my family and myself would enjoy. That also would keep us fullest longer. It definitely wasn’t going to be fast food, that had no nutritional value, it had to be foods that were wholesome, delicious and let’s not forget colorful!  I took to Pinterest, which is one of my favorite sites to find all types of meals that I can prepare quick and easy for my family to enjoy. You can also take a fatty, unhealthy meal and change up some of the ingredients and make that bad boy into something Devine for your family to enjoy.  It’s a Snowy day here on the East Coast but that doesn’t stop me from keeping my goals in focus and my health on Q! Veggie Quiche

Looking for a quick & simple meal for your family, where you can set it and forget it lol πŸ˜‰Well this is not it 🀷‍♀️However here is one of my favorite meals that I make for my family.  My Veggie Quiche contains:  1 Pie Crust of your Choice 1 Cup of Broccoli  1 Cup of Carrots  1 Cup of Cauliflower   1 Cup of Mushrooms 1/2 Cup of red onions 2 EggWhites 1 Cup Almond Unsweetened Milk...  1/3 Cup of Bread Crumbs!  Directions: In a Large Mixing Bowl, combine all veggies, then in a smaller bowl combine all wet ingredients, place all veggies inside of pie crust then pour in wet ingredients inside of pie crust, bake for 1 hour then sprinkle bread crumbs on top of Quiche place back in over for 20 minutes, then pull from oven, let cool then serveπŸ˜‹ This dish is definitely one for the books❤️❤️❤️πŸ˜πŸ˜πŸ˜πŸ’‹πŸ’‹ #SimpleandDelicious

Sweet Onion Pinto Bean Burger πŸ”

Every time I sit down to think of a way to incorporate a healthier burger for my family, I think about the variety of beans that are in the market. There are so many different ones such as black beans, kidney beans, chickpea, navy, black eyed, black turtle, lentil, the list goes on and on.  I decided to make my family a delicious Sweet Onion Pinto Bean Burger. The recipe is as follows:  πŸ’œ 2 Cans of Pinto Beans Drained and rinsed throughly with cold water πŸ’œ 1 Red Onion Chopped Finely  πŸ’œ 1 Red Bell Pepper Chopped Finely πŸ’œ 1 Can of Corn Drained and Rinsed Throughly with Cold Water πŸ’œ 1 Teaspoon of Garlic Powder πŸ’œ 1 Teaspoon of Black Pepper  πŸ’œ 1 Teaspoon of Garlic & Herb Powder Directions: In a Large Bowl add your beans and corn and mash, then add the remainder of your ingredients. Each patty should be 1/2 diameter thick and as large as you like them.
