Healthy Lemon Poppyseed Muffins

If your anything like myself, you are a bread lover! It’s something about bread that just makes you feel all warm and gooey inside! This bad boys right here are nice and fluffy, they aren’t heavy in texture abd you won’t get the itis/ sleepy after you have one of these! 

It’s a win and a love able situation all around! Below are the Ingredients: 

1 3/4 cup of Almond Flour 

1/2 cup of Date Sugar

1 tsp of baking powder

3/4 tsp baking soda 

2 Tbsp of lemon zest 

2 Tbsp of poppy seeds 

1 cup of Plain Greek Yogurt 

1/3 cup of lemon juice

1 egg 

1 Tbsp of Vanilla extract

1/3 cup of coconut oil 

  Instructions: 

Preheat oven to 350 degrees 

Line your muffin pan 

Mix all dry ingredients first in a separate bowl, then mix all wet ingredients in another bowl, then pour and mix all the wet ingredients into the dry ingredients. 

Use a 1/4 measuring cup to scoop ingredients into muffin pan. Bake for 20 minutes, check with toothpick or fork to make sure muffin is throughly cooked all the way through. 

Once completely baked, let cook for 15 minutes, then serve
