Pumpkin Spice Muffins

Let’s talk pumpkins! Did you know that you can do so many things with pumpkins, especially in the kitchen? 

You can bake a whole pumpkin, store and freeze the pumpkin. Decorate and use it for decor in your home. I use it in baking, purée’s, smoothies, bread and soup. 

Here is one of my favorite recipes with (walnuts & chocolate morsels) Optional 

Bake a small pumpkin at 350 degrees for 50 minutes

Preparation for the pumpkin: Polk small fork size holes in about( 2) times only 

Once nice and done, it’s time to remove the peeling and take your pumpkin and mash it all up in a mixing bowl. 

You will store some pumpkin for later in the freezer in a nice sealed container of choice, and use some for this recipe. 

Ingredients: 

1 1/4 cup of organic whole wheat flour 

2 teaspoon of baking soda

Pinch of sea salt 

1/4 cup of Almond milk

2 tbsp of Flaxseed

1/4 cup of maple syrup 

1/3 cup of coconut oil

1 cup of pumpkin purée 

1 tsp of nutmeg

1 tsp pumpkin spice 

1 tsp of pumpkin spice

                               Direction's:

 In a mixing bowl place all dry ingredients and mix together. Then add in all wet ingredients and mix together. 

Muffin pans: scoop muffins evenly into the muffin cups. Bake for 25 minutes, once done pull from oven and let cool

(Makes 12 muffins)
